Stone Fruit Strudel



Cookie Crumble:

2 cups walnuts or pecans
1 cup almonds
6-8 medjool dates, pitted
4 T raw honey
1 T lucuma powder
1 tsp vanilla bean powder
1/4 tsp himalayan crystal salt


3 1/2 cups sliced stone fruit
1 T coconut oil
1 T raw honey


Cookie Crumble:

Place walnuts and almonds in a food processor and pulse until broken down into a fine mixture. Add all remaining ingredients and mix until combined and beginning to stick together like a loose dough. Loosely pack 1/2 of the dough in a large glass baking dish and set the rest aside.


Top the crumble crust with 3 cups of the stone fruit. In a blender, mix 1/2 cup stone fruit with the coconut oil and honey until smooth. Pour over the fruit. Top with remaining crumble and serve or chill for a few hours.
